
Chef Lakhan dishes out some great sushi at Mizu
I returned to Mizu, a much awarded restaurant in Mumbai’s suburb of Bandra, for a meal last week. This was my second visit. The first time was an anonymous date night with K where we enjoyed the food and experience quite a bit.
My dining companion and host this time was the young chef (he often speaks of when he ‘was young’!) and co-owner of the restaurant, Lakhan Jethani. He entered the hospitality industry when he was 16 and worked in every possible department since then…’effed up everything’ (pardon his French)…till he figured out that his calling was to be in the kitchen. He then developed an interest in Japanese cooking and culture and travelled to Japan to train as a chef. He opened Mizu 6 years back with his school time buddy and partner, Vedant Malik.
His passion for cooking is palpable and his skill comes through in what he serves.
I am not sure of the exact names but some of the dishes that blew me away were the fresh seaweed salad, Japanese savoury cheese puff with faux egg yolk made with pumpkin puree, the grilled scallops, the nigiri (so salmon and foie gras), the cacao bar and the strawberry slice cake.
Mizu means water in Japanese and Lakhani says that his cooking has adopted the values of water such as flow, progression and adaptability which he hopes makes it unique to Mizu and yet Japanese in idiom.
This was a hosted meal.
