Veg roll and veg on hummus

I am sure that by now you know about the joy that I get while making breakfast everyday. Something that was inconceivable for someone who is not a morning person. The first thought in my mind when I wake up (and have fed the #KittyKarmakars) these days is about what to make for breakfast.

 

There were wholewheat ready to cook parathas sent by Fresh Needs in the fridge today and making rolls was an obvious answer. I had made egg rolls a couple of days back and did not want to repeat that though. So I decided to make vegetable rolls. Now ‘vegetable roll’ back in the day in Kolkata meant a spiced mashed potato roll, but that would not do in the world of #littlejackhornermeals would it?

I walked into the kitchen as a nebulous plan formed in my head. We have bought a new Hitachi fridge recently where the fridge section is at the top and the vegetable chamber is in the middle and that has been a boon for me. The freezer is at the bottom.

I took out the parathas from the fridge and then rummaged through the vegetable chamber. I took out a spring onion stalk, a green capsicum; and a green chilli, odd bits of red carrots and a piece of radish from the lot Fresh India organics had sent me a week back. Plus an onion. I roughly chopped and sliced the veggies after I asked Alexa to play the best of Wham! I could have got our house help R to slice them I suppose, but I like putting the whole thing together to be honest.

Vegetable rolls

I then put the pan on the gas and suddenly decided to use the cold pressed sesame oil that the folks at Sow Fresh India had sent me. The aromas of sesame engulfed the kitchen while I tossed the vegetables in it. Took me back to the Hokkien Mee stalls of the Hawker Markets of Singapore. To get the ‘Kolkata roll’ feel, I added the toasted jeera and red chilli powders that had come ages back with the Soam chaat box and the chaat masala from the Old Fashioned Gourmet. The Kolkata rolls are made with maida parathas and loads of dalda.

I added some lime juice at the finish after I toasted the wholewheat parathas, which turned out to be incredibly home-like and yet tasty, while rolling them up with the veggies inside and placed the rolls on a hot tava to heat them after I clicked pics for Insta.

I served the veggies to K on a bed of hummus (from Regal Stores) and drizzled some extra virgin olive oil on it. She said she loved it. I will miss making breakfast for her when her WFH phase ends.

Tell me, does making your own breakfast excite you, or am I the only breakfast nut?

PS: Talking of excitement, I was rather thrilled to ‘make’ rotis for the first time in my life and that too, ones that puffed up. These were the Fresh Needs ready to cook rotis. I love food gifts, promo samples like these which I can use. 

 

Incidentally, all the people mentioned in this posy had checked with me before sending stuff. It’s pointless when people send promo samples without asking and it has things like sugared drinks or desserts or even alcohol which I do not consume these day. At times I do not even know whom to give it to. And all the packaging that is discarded. What a waste.
