Wafer per eedu using Candies sandwich ke saath free chips and a water sprinkling on wafer tip given by K the last time I made this. ‘Sprinkle some water on the chips to ensure they don’t become hard.’

The last thing one needs when in extreme pain is a messed up breakfast. And that’s what happened when #kayteecooks served me a bitter and doughy dosa. Dosa is the one thing she always gets right. I went to the kitchen and figured out that she had used the @kokanbazar ragi amboli mix which needs to be soaked overnight instead of the @mtr_foods multigrain which is instant. Plus ragi is inherently bitter and which is why I follow chef @nalan.gopi ‘s advice and add red onions to counter it. ‘Why,’ I fumed? ‘There’s dosa written on this packet too,’ she replied. #kayteecooks has a habit of taking calls in the kitchen herself but is usually out of her depths.

 I shook my head in dismay and went in, ignored my searing pain and the messy kitchen, the two sisters working inside which cramped the place, and took two eggs from the fridge. I thought I’ll make sausage and cheese omelettes and then saw the jhuri bhaaja sent by @bhutuskitchen and thought I’ll make sali per eedu. Then the spirit of K’s granny gently guided me towards the unopened pack of chips and I decided to make wafers per eedu. 

I took my espresso in mamma’s cup and saucer. The wafers per eedu was magnificent and I popped my painkillers and prepped to wait for my physio. What’s the recipe? It’s intuitive and was not given to me so I don’t know if I should share.

Heat pan. Ghee. Chips. Veggies (onion, tomato, green chillies). Sprinkle water on chips. Break eggs. Season. Cover pan. Let it cook.

    Nice post, Kalyan. The best obituary people like Kaushik Da can get. It doesn't get covered in media. But, as you said, people like him are God's soldiers, powering our communities& bringing people together, forming everlasting bonds.
