The picture above gives you an idea of how a Parsi care package looks. This was of our lunch with Navsari born genius Mumbai based Parsi home chef Mahrukh Moghrelia most kindly sending chicken dhansak and bheja nu cutlace, from what she cooked for her family today, for us.

The goat brain cutlet was a work of art with a very subtle garlicky note encasing the perfectly textured bheja (firm and yet creamy), which was wrapped in a delightful lacy egg batter. The seasoning, just perfect.
We were stunned by how tender the chicken in the dhansak was, but then Mahrukh chooses her birds personally and gets the very best. The dal was spicy (rustic as she calls it) and yet had us do a #chetepute. ‘She cooks the way my bapaiji, who was a very good cook, did,’ exclaimed K.

Mahrukh sent crunchy saariya and a lip-smacking mango and raisin chutney made with mango from her native Navsari too. The chutney is for sale & she has 7 kilos left. What are you waiting for?
Transparent glassware is Kryptonite for food photographers but I took it out to recreate the feel of a Parsi dining table. Right up to the lace table cloth.
‘Enjoy with good health n happiness…love to my munnus too…,’ said Mahrukh. Baby Loaf and Nimki being the munnus.

PS: Dear fellow Parsis, dhansak refers to the whole deal. The dal AND the rice. Not just the dal. Kachumber on the side is a must.
